I'm creating a food bucket list for my trip next month. What are the absolute must-try dishes? I'm adventurous with food and want to try authentic local cuisine, not the tourist-friendly versions.

Also interested in street food recommendations if they're safe for tourists.

Pro tip: for the best momos, go to the small shops in Bouddha area. The Tibetan influence makes them extra special. Also try 'jhol momo' - momos in a tangy soup. Game changer!

You HAVE to try:
- Momo (obviously!) - go to a local shop, not fancy restaurants
- Dal Bhat - the national dish, unlimited refills!
- Sel Roti - sweet rice bread, perfect with tea
- Chatamari - Nepali pizza
- Yomari - if you're there in December during the festival

For street food, the areas around Ason and Indra Chowk in Kathmandu have the best options. Stick to stalls that have high turnover - if locals are eating there, it's usually safe!

Don't miss Newari cuisine! It's specific to the Kathmandu Valley. Try 'Sapu Mhicha' (buffalo bone marrow soup) if you're adventurous. For a milder option, 'Bara' (lentil pancake) is delicious and vegetarian-friendly.
